Here is the recipe for Cheryl's famous Banana Cake! It was one of Pastor Chuck's favorite desserts! Enjoy!
3 cups cake flour
2 teaspoons baking soda
1 cup margarine- Imperial or Blue Bonnet
2 cups sugar
3/4 cup milk
4-5 mashed bananas
1/2 teaspoon vanilla
3 – 8″ cake pans oiled and lined with wax paper
Sift cake flour and baking soda 3 times and set aside. Cream margarine and sugar together. Add the eggs and blend for 2 minutes on high. Add 1/4 cup of the milk and the smashed bananas. Beat for 1 more minute. Add the 1/2 cup of the flour mixture at a time alternating with the rest of the milk. Beat well after each addition. Add vanilla. Fill each pan evenly with the cake batter.
Bake at 350 degrees for 25 -30 minutes or until done.Let cool. Carefully place the first layer on cake pan and coat with cream cheese frosting. Add second cake layer on first and frost it completely also. Then add last layer and frost the entire cake with frosting.
Cream Cheese Frosting
2 blocks of 8oz. Cream cheese softened and well beaten
1/4 cup butter
2 tablespoons milk
1 teaspoon vanilla
5-6 cups powdered sugar
Beat butter, milk, and cream cheese until they are thoroughly combined. Add powdered sugar one cup at a time and beat well after each addition. Add vanilla.
