Flour Tortillas

Homemade flour tortillas... MMM!

2 cups unbleached white flour (Plus flour for kneading and rolling)

¼ cup oil (I like grapeseed but vegetable oil will do just as well)

½ cup hot water

1 teaspoon salt

Combine the flour and salt. Stir.  Add the oil to the hot water and pour over flour mixture.  Mix with fork.  Work the dough with your fingers until the consistency is like playdough (More flour or water might be needed to get the consistency right).

Divide into 12 equal size balls.  Pat flat into pancake and lay on floured flat surface.   Sprinkle with flour and roll into a large round.

Place on hot flat griddle over medium flame.  When bubbles appear (about 30 seconds to a minute) flip over and cook on the other side for 10-20 seconds. 

Keep warm in dishtowel.
