These are THE best cookies. I love to make them for my family, freeze half the dough and have them around the house for a week! This is the "healthy" version but you could adjust to make them your own!
1 cube butter (or 1/2 cup coconut oil)
1 egg
3/4 cup coconut sugar
1/4 cup agave
1 tablespoon molasses
1 teaspoon vanilla
–> Beat until smooth
1 cup whole wheat flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 cup shredded unsweetened coconut
1 cup rolled oats
1 cup fruit juice sweetened corn flakes
–> Combine wet and dry ingredients
Roll into balls and bake at 350 degrees for 8 minutes
Dough can be rolled into plastic wrap and frozen. Simply cut as many as needed.
